Hamburger Casserole with Potatoes

This casserole recipe is easy to prepare and bake, and it makes a wonderful family meal. It's a homey mixture of ground beef, topped with mashed potatoes and shredded cheese.

Ingredients

  • 1/4 cup fine dry bread crumbs
  • 1/2 cup milk
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons minced onion (1/2 small onion)
  • 1 large egg
  • 2-4 cups prepared mashed potatoes, about
  • 3/4 cup shredded sharp Cheddar cheese
  • Paprika, optional

Preparation

Step 1

Soak bread crumbs in milk. Mix ground beef, salt, pepper, onion, bread crumb-milk mixture, and egg. Spread in a 9-inch pie plate. Bake at 350° for 35 minutes. Top with mashed potatoes; sprinkle with cheese. Return to oven for 10 minutes longer, or until cheese is melted and potatoes are thoroughly heated. If desired, sprinkle hamburger casserole with paprika.

I'm not a big cook but I can easily whip this up for my family. Being a working mother, I need something fast and easy to make. I call it Hamburger Pie. Even my picky kids eat this right up. If you are creative, there are a lot of different things to doctor it up as well.

For a bit more flavor I added lemon peper to the beef mixture and used roasted garlic flavored mashed potatos. Really liked this dish and will serve it at a family gathering again. I also used a 9inch square dish instead of the pie pan. That way it's not heeping in the middle.

A Winner! Easy throw-together dinner. I was impressed by how moist it turned out and with more flavor than I expected. I did add garlic salt in lieu of regular salt. Will definitely add to my menu!

Hmmmmmmm....Well I always like creating.......and odd stuff too. Doing now, hamburger, diced potatoes, big onion sliced up, or diced up. Added a few seasonings, a can of cream of asparagus soup....even threw a little bread crumbs in with it. And mays well add some noodles with it, as I am doing now. I could also add some green pepper to. BUT... so yummy for a fast quick meal. Add a salad, or garlic bread and make a complete dinner.

Good standby. I have a family of five and everyone liked it! It was good and pretty easy. Glorified meat loaf... I used 1/8 c. Karo Syrup instead of egg because my son is allergic. Drain dish of grease prior to spreading the potatoes. Good and will make again.
