Pineapple Sandwich Filling by Mama

This was a staple finger sandwich that mother made for showers and weddings.

Ingredients

  • 1 med or large can of crushed pineapple
  • 2 tlbs sugar
  • 2 tlbs flour
  • 1/2 cup mayonaise
  • 1 tsp vanilla
  • 2 eggs

Preparation

Step 1

Drain pineapple juice into double boiler. Add eggs, flour, sugar, mayonaise. Beat until mixed and cook over water until custard thick, stirring often. Add Vanilla and beat until smooth. Add pineapple...remove from stove. Regrigerate.
