Crockpot Chicken Dinner With Smoked Paprika

Smoked paprika gives the chicken a delicious, smoky flavor. This is an easy one-pot meal to prepare for the slow cooker.

Ingredients

  • 4 boneless chicken breast halves
  • 2 pounds small white potatoes, peeled and cut in 1-inch cubes
  • 2 medium carrots, cut in chunks
  • 1 medium onion, cut in thin wedges
  • 1 teaspoon dried parsley flakes or 1 tablespoon fresh chopped parsley
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoons melted butter, divided
  • 2 tablespoons Spanish smoked paprika
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon honey
  • Dash salt
  • Dash cumin

Preparation

Step 1

Wash chicken and pat dry. Combine potatoes, carrots, and onion wedges in a 4- to 6-quart slow cooker with parsley, 1 teaspoon salt, 1/4 teaspoon pepper, and 2 tablespoons of the melted butter; toss.

Combine the remaining 2 tablespoons of butter with the smoked paprika, lemon juice, Worcestershire sauce, honey, and dash of salt and dash of cumin. Rub chicken breasts with the paprika mixture; arrange on vegetables.

Cover and cook on HIGH for 3 1/2 to 4 1/2 hours, or on LOW for 7 to 9 hours, until chicken is cooked through and vegetables are tender.

Old Fashioned Good! Smells like mom's kitchen in the 1950's and is lip smacking good to boot. I used the baby Dutch yellow potatoes, just washed, not peeled, a small bag of peeled carrots and sliced the onion into thin rings. To the spice mixture over the veggies, I also sprinkled some flour (about 2TBSP.) tossed and added about a cup and a half of chicken broth. Didn't have smoked paprika, just used regular and it was great. I did cook on LOW for 9 hours and the chicken fell apart and was delightfully delicious. Have already made again for mom, and she LOVED it.

Good but wasn't as flavorful as it smelled. Next time I will saute the onions, and add garlic to that, to add flavor. But THANK YOU for introducing me to Smoked Paprika.

YUM! It smells like heaven. I added Thyme to my whole chicken and some extra salt via other recommendations.

Highly recommended. I was a little concerned at first...seamed too simple to be this good! There three of us and we each had SECONDS! And still had a little left-over! Would definitely recommend making this dish...very easy, and super tasty!

BLAND. I think the recipe would have been good if it had more ingredients...as a stand alone Mormon stew I guess it would be ok...but I and many others love spices and flavor and this dish needed to have more to it...so I added a cup of vinegar, cup of soy sauce, 2 tblsp garlic, more onions, salt and pepper and even some cayenne,....after that it actually had the potential to be somewhat of a good chicken stew. I'm not trying to blast this recipe but in this house flavor is the key and that dish had none until I fixed it. Thanks for the thought though.

Wondering about the rub....I made the rub as instructed. But it was too saucy for a rub. I dipped chicken breasts in it instead. I think its going to be good!

OMG! This is delish! I made this dish about 3 weeks ago and my husband and I really enjoyed it. Today, he asked for it again, is that great or what! I made some changes due to what I had on hand so I thought I'd share.
I used boneless, skinless thighs (I even used frozen ones and cut them into 3" chunks) instead of breasts - more flavor and they don't dry out. I didn't have any "smokey" Paprika, so I used what I had and added a whole, dried chipotle chilie and cut the stem end off, leaving the seeds intact (they have a very smokey fragrance), it was wonderful and not too hot. Since I didn't have any parsley in any form, I threw in some celery, leaves and all. When my husband asked me to make it again, he suggested adding some artichoke hearts which I thought was a great idea. I almost forgot; I, too, had to increase the salt and pepper. When I reached into the pantry to get the honey, I saw a jar of apricot preserves and thought that might make a good substitution for the honey next time. I was disappointed that the lemon juice flavor disappeared while cooking so this time I'm going to add some fresh just before serving. This is such a yummy dish and as everyone has said, SO EASY!

I used a whole chicken instead of chicken breasts because that is what I had on hand. This was a quick simple meal. Everyone in the family enjoyed it. I used regular paprika instead of Spanish. Next time I am going to use Hungarian paprika and use alittle more salt. I served this with dressing and a salad and it made a great dinner. Chicken had a delicious and different taste. I will definitely make this again.

Husband loved this!! I make homemade meals 95% of the time and get tired of the same ol' same old - this was very simple yet hearty. Unusual to have anything other than "Thanks for supper" and yet heard twice how much he enjoyed it. Easy, liked it and covers nearly all food groups.

Best dinner I've made! Loved this! It was great. Very easy to prepare, although my crockpot broke shortly after I started it. I had to refrigerate it & cook it in the oven instead (for about 2 hours on 350 degrees). I can't say exactly how it would turn out in a crockpot, although I plan to try it again when I replace mine, but in the oven it was great. My husband said it was probably the best meal I've made him (I'm not the best chef though!).
