Shrimp Aegeau

  • 1 1/2 to 2 lbs shrimp
  • 1/2 lemon
  • 2 tablespoons minced garlic
  • 1/2 to 3/4 cup green onions
  • 1 can (14.5 oz.) diced tomatoes
  • 1/2 cup olive oil
  • 1/4 to 1/2 cup white wine
  • Parsley
  • Black pepper
  • Oregano
  • 1/2 package frozen spinach
  • 1/2 can chicken broth
  • 5 oz. feta cheese
  • Pinch of salt
  • 2 lbs pasta



Step 1

Prepare all ingredients before hand. Marinate shrimp in olive oil, garlic, and wine. Start water for pasta. In large skillet sauté garlic, onions, tomatoes, oregano. Add shrimp and lower heat. Just before shrimp is done put in spinach and chicken broth and the rest of the spices. When the shrimp is done throw in crumbled feta cheese and stir. Serve over pasta.
