Ingredients

  • 3 15 oz can black beans, drained and rinsed
  • 1 17 oz frozen corn thawed
  • 2 10 oz cans diced tomatoes with green chile peppers, partially drained
  • 2 tomatoes, diced
  • 2 bunches green onions chopped
  • 1 avocado chopped
  • 2 tablespoon lime juice
  • 1 tablespoon red wine vinegar

Step 1

In a large bowl, mix together black bean, corn, diced tomatoes with green chiles, tomatoes and green onion stalk. Before serving add avocado, lime juice and vinegar
