Belgian Waffles

Follow the recipe below for some of the best waffle batter, which serves 5 to 7. Note that reducing the butter may cause waffles to stick.

Ingredients
- 2 cups flour
- 4 teaspoons baking powder (use less for high elevations)
- 1 1/2 - 2 cups milk (more milk means lighter waffles; less means heavy, but easy to remove)
- 2 eggs, beaten
- 1/2 cup melted butter (1/3 cup vegetable oil may be substituted)
- 1/2 teaspoon vanilla or almond extract (optional)
Preparation
Step 1
Combine flour and baking powder. Make a well in the center. Add milk, eggs, butter, and vanilla, and mix well. Batter should be slightly lumpy.
Cook in Oster Flip Nonstick Belgian Waffle Maker (*AS WITH ALL NON-STICK SURFACES DO NOT USE SPRAY OILS. Use vegetable oil or butter applied with a brush before use.)
Note from review on Amazon: "Before first use I cleaned it before use by wiping with damp paper towel, heating it, brushing it with Crisco shortening, and then cooling it and wiping with a dry paper towel. I highly recommend this because the non-stick ceramic coating inside really smells of chemistry in action. Once heated and oiled this way, the smell is completely gone and it felt safe to use. After making two very fine waffles, the only cleaning needed seems to be 1) the drip tray needs a light hand wash with soapy water, and 2) wipe the waffle iron with a dry paper towel after cooling."
