- 2 avocados
- 8 eggs
- Milk
- Olive oil
- Salt and pepper

Preparation
Step 1
Beat 8 eggs, 1/2 cup milk, salt and pepper in a bowl
Put 3 tbsp light olive oil in a large non-stick frying pan
Heat on medium heat
Add the egg mixture and stir gently until starting to set
Stir through 2 thickly sliced avocados
