Ingredients

  • Pork and Marinade
  • 1/3 cup reduced sodium soy sauce
  • 2 sliced green onions
  • 3 Tbsp. brown sugar
  • 3 Tbsp. minced fresh cilantro
  • 3 Tbsp. Thai chili sauce
  • 2 Tbsp. sesame oil or toasted sesame oil
  • 2 tsp. minced garlic
  • 1-1 1/1 lbs pork tenderloin cut into 1/4 inch slices
  • Dipping Sauce (some of this will be used as the dressing for the Asian salad, but only about half. The rest will be dipping sauce for your meat.)
  • 3/4 cup reduced-fat sesame ginger salad dressing
  • 1/2 cup creamy peanut butter
  • 1 Tbsp. sesame oil or toasted sesame oil
  • 2-3 tsp. cider vinegar
  • 1 tsp. salt
  • 1/2 tsp. crushed red pepper flakes
  • 1/4 tsp. pepper

Preparation

Step 1

1. In a jar with tight-fitting lid, combine dipping sauce ingredients, shake well, and chill until serving.
2. In a small bowl, combine marinade ingredients (not pork yet) and pour into large resealable bag. Add pork, seal bag and turn to coat.
3. Refrigerate for 30 minutes.
4. Drain and discard marinade. Thread pork slices onto skewers and place on broiler pan. (We skip the skewer part and just lay the meat on a greased broiler pan.)
5. Broil 3-4 inches from heat for 3-4 minutes on each side.
6. Serve with dipping sauce.
