Rib Eye Steaks
- Rib Eye Steaks
- Olive Oil
- Mushrooms, chopped
- Shallots, chopped
- Red wine vinegar
- Fresh thyme and rosemary
Liberally salt steaks (night before if possible). Sear both sides in a hot cast iron fry pan.
Add the mushrooms and shallots around steaks. Add salt, butter, thyme and rosemary. Place in oven for 5-7 minutes.
Remove from oven, remove steak from pan. Add red wine vinegar to mushroom mixture and heat through.
Slice steaks, surround with mushroom mixture to serve.
