Rotisserie Chicken with Wild Rice

  • 1 medium carrot
  • 1/4 cup cooked wild rice
  • 1/2 cup cooked organic rotisserie chicken

Preparation

Step 1

Wash and peel the carrots. Cut into small pieces. Place carrots in a saucepan with enough water to cover. Bring the water to a boil; then simmer until the carrots are very tender, about 15-20 minutes. Place hte carrots in a food processor or blender with the rice. Dice chicken; add to the food processor. Puree to a semismooth consistency, about 30 seconds adding water when necessary.
