Beef Fajitas

  • 3/4 pound beef sirloin strips
  • 1 tbsp extra virgin olive oil
  • 1/4 cup lime juice
  • 1/2 cup balsamic vinegar
  • 2 tbsp soy sauce
  • 2 tbsp chopped garlic
  • 1 tbsp chili powder
  • 1/2 tsp hot pepper flakes
  • 2 tsp kosher salt
  • 1/2 red onion , thinly sliced
  • 1/2 cup red, orange or yellow pepper strips
  • For serving
  • 1 pkg tortilla
  • sourcream
  • salsa
  • shredded monterey jack cheese



Step 1

1. In a stainless steel or glass bowl,Mix together all ingredients except meat, add meat, cover and marinate overnight in Refrigerator or at least two hours at room temperature
2.Preheat oven to 325. Stir fry meat in a large non stick skillet heated with 1 tbsp extra virgin olive oil until beef is browned about 3-5minutes. Add onion and peppers and continue cooking until hot.
3. Remove from heat and keep warm
4. Wrap tortillas in foil, warm in oven 5-10 minutes
5. To serve-lay tortilla on plate, place some meat mixture down the center, top with sour cream, salsa, cheese and optimnal guacamole. Fold sides over filling and turn over
