Southerwestern Pulled Pork Sliders

Ingredients

  • 1 1/3 cup soaked pinto beans
  • 2 lb pork roast (butt, shoulder, New York)
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • red wine vinegar
  • garlic powder
  • avocado
  • buns
  • sliced onion
  • 6 cubes chicken buillon

Step 1

Make sure you let the beans soak overnight, MUCH better this way. Drain them well, put in the bottom of the CP. Remove any extra fat off the roast, place that ontop of the beans. Throw the onions in there, pour 6 cups of water in, and add the 6 cubes of buillon. Let it sit on LOW for the day. Mine was in there 10 or so hours.

To prepare:

Remove the roast and shred apart in a bowl. Reserve 1 cup liquid. Drain the rest of the stuff (liquid, beans, onions) through a strainer. Mash the beans in a bowl, adding reserved juice if you need to, and add garlic powder and red wine vinegar to taste.
Add the salsa, cumin, and chili powder to the meat. Throw it back in the CP to keep warm.

To make the sandwiches, spread the mashed beans on one side of the bun, pile the meat on the other half, add a slice or two of avocado and put the bun back together. Hubby added banana peppers and hot sauce to his. ENJOY!!

I'd say this is about 6 servings.
