  • 1 cup red-wine vinegar
  • 4 cups sliced red onion

1. Combine sugar and vinegar in a small saucepan. Simmer mixture over moderately high heat, stirring until sugar dissolves, about 3 minutes. Remove from heat and stir in onions. 2. Let onions cool, stirring occasionally to room temperature. Serve or keep chilled, covered.
