Ingredients
- 1/4 C flour
- 1/2 C cornmeal
- 1 tbls cornstarch (if using gluten free flour)
- 1 tsp baking powder
- 1 tsp salt
- 1 1/2 C milk
- 1 egg, slightly beaten
- 1/4 C butter or coconut oil, melted
- 1 tsp vanilla
- 1/3 C sugar
- 3 C frozen or fresh corn

Step 1
Set oven at 350 degrees. Mix dry ingredients, set aside. Using a blender, mix together 2 cups of corn with 1 cup of the milk until slightly chunky. Mix all wet ingredients together. Add dry ingredients. Pour into a greased 8x8 pan. Bake for 45-55 minutes. Check for doneness - depends on how firm you want it to be.
