Ingredients

  • 1/4 C flour
  • 1/2 C cornmeal
  • 1 tbls cornstarch (if using gluten free flour)
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 1/2 C milk
  • 1 egg, slightly beaten
  • 1/4 C butter or coconut oil, melted
  • 1 tsp vanilla
  • 1/3 C sugar
  • 3 C frozen or fresh corn

Preparation

Step 1

Set oven at 350 degrees. Mix dry ingredients, set aside. Using a blender, mix together 2 cups of corn with 1 cup of the milk until slightly chunky. Mix all wet ingredients together. Add dry ingredients. Pour into a greased 8x8 pan. Bake for 45-55 minutes. Check for doneness - depends on how firm you want it to be.
