Lemon Bread

  • 1/2 cup vegetable shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 tablespoon finely grated lemon zest
  • 1/2 cup chopped pecans
  • 1/4 cup sugar
  • 3 tablespoons lemon juice



Step 1

Preheat oven to 350 degrees. Grease and flour medium loaf pan.

In large bowl combine shortening and sugar and beat until blended. Add eggs 1 at a time, beating well after each addition. In medium bowl combine flour , baking powder and salt and blend together. Add to shortening mixture along with milk and lemon zest and beat until blended and smooth. Stir in pecans. Bake 1 hour or until tested done.
While bread bakes mix 1/4 cup sugar and 3 tablespoons lemon juice. Set aside and stir occasionally. After removing bread from oven use fork and poke holes in top of bread and slowly drizzle lemon syrup over bread. cool in pan 15 minutes and turn out onto wire rack to cool.
