Homemade Baked Chicken Parmigiana (with Pasta)

Ingredients

  • BEST MARINARA SAUCE YET:
  • 4 (14.5 ounce) cans crushed tomatoes
  • 2 (6 ounce) can tomato paste
  • 6 tbsp. chopped fresh parsley
  • 5 cloves garlic, minced
  • 2 tsp. dried oregano
  • 2 tsp. dried basil
  • 1/2 tsp. ground black pepper
  • 2 tbsp. brown sugar
  • 4 tablespoons olive oil
  • 2/3 cup finely diced onion
  • 1/2 cup white wine (Riesling) OR Chicken Broth
  • CHICKEN:
  • 3 egg whites, beaten
  • 1 cup dry bread crumbs (Panko)
  • 1/8 cup Parmesan Cheese
  • 1/2 tbsp. Basil
  • 1/2 tbsp. Oregano
  • 1/2 tbsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Black Pepper
  • 10 skinless, boneless chicken breast halves
  • 10 ounces shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • SERVE WITH PASTA, GARLIC BREAD and SALAD

Preparation

Step 1

SAUCE:
1. Mix / Blend crushed tomatoes, tomato paste, chopped parsley, minced garlic, oregano, basil, pepper and brown sugar until smooth.
2. In a large skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine / chicken broth.
3. Simmer for 30 minutes, stirring occasionally.

CHICKEN:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet. (Consider cooking on a cooking cooling rack for a more crispy chicken.)
2. Pound chicken to desired thickness (cooks well is all breasts are approximately the same thickness).
3. Pour egg whites into a small shallow bowl. Place bread crumbs, 1/8 cup parmesan cheese, basil, oregano, garlic powder, onion powder and black pepper in a ziploc bag.
4. Dip chicken into egg whites, then shake in the bread crumbs.
5. Place coated chicken on the prepared baking sheet (or cookie cooking rack) and bake in the preheated oven for approximately 30 minutes, or until no longer pink and juices run clear.
6. Pour desired quantity of the sauce into a 9 x 13 inch baking dish. Place chicken over sauce, and cover with additional sauce, if desired. (Consider serving additional sauce on the side and having diners add their desired amount of sauce.)
7. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.
