Ingredients
- 1/2 package bacon, cut into 1/2-inch slices
- 2 potatoes, cubed
- 2 eggs, slightly beaten
- 2 oz. grated cheese
Preparation
Step 1
Cook bacon in medium skillet until done. Microwave potatoes in a small covered casserole for about 6 minutes (until fork tender). Add to bacon in the skillet from which you have drained most of the grease. Then pour eggs over the potatoes and top with cheese. Cook over low heat until the eggs are set.
