Ingredients

  • Crust:
  • 2 C flolur
  • 3/4 C (1-1/2 stix) chilled, unsalted butter, cut into pats
  • 1/2 C confectioners' sugar
  • 1/2 tsp. salt
  • Filling:
  • 1-1/3 C granulated sugar
  • 3 Tbl. flour
  • 1/2 tsp. baking powder
  • 1/3 C lemon juice
  • 3/4 C egg substitute
  • 2 tsp. grated lemon rind
  • Confectioners' sugar, for dusting

Preparation

Step 1

Heat oven to 350. Line 13x9x2 inch baking pan with foil so foil overhangs short ends. Lightly coat with Pam.

Prepare Crust: Whirl flour, butter, sugar and salt in food processor, in on and off pulses until mixture resembles coarse meal. Scrape crust into prepared pan. Spread level; pat down to compact evenly. Bake crust in 350 oven for 20 minutes or until lightly colored. Meanwhile, prepare filling.

Filling: Combine sugar, flour, baking powder, lemon juice, egg substitute and rind in food processor. Whirl until well blended. Pour over hot crust. Bake in 350 oven for 20 minutes or just until set in center. Transfer pan to wire rack to cool. Carefully life foil to remove dake; cut into squares. Dust with confectioners' sugar and remove from foil. Bars can be refrigerated in airtight container for up to 1 week
