Ingredients
- 2 cups broth
- 10 oz couscous
- 1/3 cup olive oil
- 1/3 cup fresh cilantro
- 5 TBS lime juice
- 2 tsp minced garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 cup corn
- 2 tomatoes diced
- 2 cups black beans
- 1/3 cup diced onion or 1/3 cup thinly slices green onion
Preparation
Step 1
1. Bring broth to boil
2. Stir in couscous; cover. Remove from heat and let stand for 5 minutes. Fluff with fork.
3. Place Couscous in a large bowl.
4. Combine olive oil, cilantro, lime juice, garlic, salt and pepper.
5. Gently fold into couscous.
6. Add remaining ingredients and fold gently. Adjust salt and pepper.
7. Refrigerate, covered, for at least an hour, or overnight.
