Shrimp Saganaki

This recipe serves two. The amount of each ingredient depends on your person taste. It is easily doubled or tripled.

Ingredients

  • 12 large shrimp
  • 3 tablespoons olive oil
  • 1/2 small red onion, large dice
  • 1/2 red pepper, large dice OR
  • 1/2 yellow pepper, large dice
  • 1/2 teaspoon crushed red pepper or to taste
  • 1/2 cup kalamata olives, diced
  • 2 medium ripe tomatoes, seeded and diced (about 1 cup or so) I used several Compari tomatoes.
  • 1/2 cup Greek feta, coarsely crumbled (plus a little more for the top
  • 1 teaspoon dried oregano (I didn't add this)
  • 1 cup marinara (I used Trader Joes tomato and basil marinara)
  • Salt to taste

Preparation

Step 1

In a medium skillet, heat olive oil over medium-high heat and then add onions, peppers, tomatoes,olives and dried oregano. Sauté until onions are soft and the tomatoes are starting to break down, about 5 to 7 minutes. Add the marinara sauce and simmer 5 to 10 minutes or until you end up with a nice thick sauce.

Stir in the crumbled feta. Taste and adjust seasoning with salt and/or additional crushed red pepper. Arrange shrimp on top. Sprinkle the remaining feta cheese on top and place under the broiler for about 5 minutes or until the shrimp are cooked through.
(I broil the shrimp a little while before I add the extra feta or it might burn.)

Can be served over angel hair pasta. I've also served it with asparagus, too.
