curry chicken salad

Ingredients

  • 3 cups cubed chicken
  • 1 1/2 cups sliced celery
  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 1 tsp salt
  • 1/8 tsp onion salt
  • 3 tbsp lemon juice
  • 1 - 2 tbsp curry powder
  • mixed greens
  • optional toasted almonds

Preparation

Step 1

combine chicken and celery
in a seperate bowl, combine mayo sour cream lemon and curry
add mayo mixture to chicken, blen d well
serve over mixed greens and sprinkle with almonds if desired
serve with chips and slices of roasted red pepper for garnish


*to toast almonds, spread out in a single layer on a baking dish. toast at 350 stirring occasionally for 10 - 15 minutes - or - toast in an u greased skilled over medium heat until golden brown
