Potato Cheese Soup

Ingredients

  • 8 cups peeled and cubed potatoes
  • 2 cups peeled and chopped onions
  • 4 cups chopped celery
  • 4 cups water
  • 2 tsp salt
  • 4 cups half and half
  • 6 tbsp butter or margarine
  • 1 cup grated sharp cheddar cheese
  • 4 tbsp fresh parsley, optional

Preparation

Step 1

1. Put potatoes, onions and salt in water to cover in large pot; simmer until tender, about 15 mins. Drain. Put in blender or food processor fitted with metal blade and puree chunky style; return to soup pot.

2. Add half and half, butter and cheese. Simmer until piping hot but don't boil. Garnish with parsley if desired. Good served with corn bread.
