Rainbow Mashed Potatoes

Ingredients

  • 1 # red potatoes, quartered with skin on
  • 1/2 rutabaga, peeled & cut into small chunks
  • 2 large carrots, peeled & cut into chunks
  • 1/4 c. cream cheese
  • 1/4 c. sour cream
  • 1/4 c. milk
  • 2 tsp. basil
  • 1 tsp. Bouguet Garni

Preparation

Step 1

Boil vegetables until fork tender, 15 min. or so. Drain, leaving just a little to moisten the mash. Add the rest of the ingredients, mash just to mix the colors, leaving it chunky.
