Ingredients
- For the Brussels Sprouts Slaw:
- 1/3 cup mayonnaise
- 2 tablespoons cider vinegar
- 1 tablespoon sugar
- 1/2 tablespoon yellow mustard
- 1/3 cup small diced apple
- 2 tablespoon sliced scallion
- 1/2 teaspoon turmeric
- 1 cup sliced leftover cooked Brussels sprouts

- 2 cups chopped turkey
- 1 1/2 cups mayonnaise
- 1/4 cup water
- 1/4 cup white wine vinegar
- 1 tablespoon coarsely ground black pepper
- 1 tablespoon Creole mustard
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoon minced onion
- 3 garlic cloves, minced
- 2 teaspoons prepared horseradish
Preparation
Step 1
For the slaw, mix dressing ingredients and fold in sliced Brussels sprouts.
Using a smoking gun, cold smoke the turkey for a few minutes. Char the turkey on a griddle pan or cast iron. Mix remaining ingredients and add turkey. Toss and serve on Texas toast or soft rolls with slaw alongside.
