Ingredients
- 1/2 lb flank steak
- 1/3 c lime juice
- 1 t black pepper
- 1/2 t cayenne pepper
- 1 green pepper
- 1 red pepper
- 1 small white onion
- 8 flour tortillas, warmed
- 1/2 c lowfat cheddar cheese, shredded
- 1/2 c lowfat sour cream
- nonfat cooking spray
Preparation
Step 1
Remove any visible fat from steak. Cut steak into very thin slices and place in flat glass pan. Mix together lime & black pepper and pour over steak. Refrig 2-4 hours. Remove seeds & inner fiber from peppers cut into very thin slices. Cut onion into thin slices and separate rings. Coat grill with cooking spray & preheat 5 min. Grill steak 3 min. Add peppers & onion on top of steak and grill 4-5 min.
To serve, fill tortillas with meat & vegetable sand pass the cheese & sour cream to add as desired
