Ham and Eggs for Breakfast

Ingredients

  • 10 eggs
  • 1 lb ground ham, cooked
  • 1 lb bulk pork sausage, cooked, drained
  • 1 1/2 cup soft bread crumbs
  • 1/2 cup milk
  • 2 tbsp dried parsley flakes
  • 1 tbsp prepared horseradish

Preparation

Step 1

1. Cook sausage just long enough to get most of the grease out, drain. Meat will finish cooking in oven with remaining ingredients.

2. In a large bowl, lightly beat 2 eggs. Add ham, drained sausage, bread crumbs, milk, parsley and horseradish; mix well. Press into a greased rings mold. Bake at 350 for 45-60 mins.

3. Toward the end of the baking time, prepare scrambled eggs with remaining eggs, seasoning as desired. Remove ring from oven and drain juices; unmold onto a serving platter. Fill center with scrambled eggs. Sprinkle cheesw on top of eggs if desired. Serve while hot.
