Apricot Almond Thumbprint Cookies

Ingredients

  • 1 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup smooth almond butter
  • 1/2 cup butter,unsalted
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/3 sugar(for rolling balls in)
  • apricot jam

Preparation

Step 1

reheat oven 350 degrees.
Mix flour, salt baking powder and baking soda in bowl and set aside.
Cream almond butter, butter and brown sugar for 3 minutes. Add egg and vanilla. Add flour mixture little at time. Roll into teaspoon size balls and then roll in sugar.Place on silpat lined sheets. Bake 8 minutes. Pull out of oven then make indent with spoon in center, fill with jam and pop back into oven for 2-3 minutes.
