Ingredients
- 1 Tablespoon olive oil
- 1 medium-sized chopped yellow onion
- 3 cloves minced garlic
- 1 1/2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 can Great Northern beans, drained
- 1 can chicken broth
- 10 ounces frozen lima beans
- 1 small can chopped green chiles
- 2 cups cooked chicken in bite-size pieces
- 1 cup chopped cilantro
- 2 Tablespoons lime juice
Preparation
Step 1
Saute onion in olive oil on medium heat for about 5 minutes. Add garlic, chili powder, cumin, and coriander, cook 30 seconds. In a small bowl, mash 1/2 the can of beans with the chicken broth. Add to the onion mixture with the lima beans, green chiles, and chicken. Bring to a boil, then cover and simmer 5 minutes. Add the cilantro and lime juice, then serve.
