Ingredients

  • 1/2 cup all purpose flour
  • 1/2 cup semolina flour
  • 2 t baking powder
  • 3/4 t salt
  • 1/2 t ground black pepper
  • 2 large eggs
  • 1 cup finely diced uncooked sea scallops
  • 1/2 cup finely chopped green onions
  • 1/4 cup chopped red onion
  • 1/4 cup bottled clam juice
  • 1/4 cup pilsner beer
  • 1-1/2 t finely chopped jalapeño chilies with seeds
  • vegetable oil (for frying)
  • tartar sauce
  • lemon wedges

Method:

Whisk first 5 ingredients in large bowl to blend. Make well in center. Add eggs, scallops, green onions, red onion, clam juice, pilsner, and jalapeño to well; stir to blend.

Preheat oven to 250˚F. Pour enough oil into heavy large deep saucepan to reach depth of 1-inch. Attach deep-fry thermometer and heat oil over medium-high heat to 325˚F. Working in batches, drop batter by heaping teaspoonfuls into hot oil. Fry until puffed, deep golden brown, and cooked through, turning occasionally and adjusting heat to maintain 325˚F, about 6 minutes for each batch. Using slotted spoon, transfer to paper-towel-lined baking sheet. Keep warm in oven while frying remaining batter. Transfer fritters to plates. Serve with tartar sauce and lemon wedges.
