Ingredients

    cups corkscrew pasta (Rotini)

  • 1

    cup broccoli bits

  • 1

    cup cauliflower bits

  • 1

    cup carrots (sliced)

  • 1- 6

    oz marinated artichokes (I use more)

  • 1- 7

    oz black olives (sliced)

  • 6

    oz salami (sliced)

  • 3/4

    cup grated Parmesan cheese

  • 3/4

    cup chopped parsley (or 2 tsp. dried parsley)

  • 1

    red onion (sliced thinly in rings)

  • Cherry tomatoes (added right before serving)

  • Dressing:

  • 2

    tsp Fines Herbs

  • 4

    T white wine vinegar

  • 1

    tsp garlic

  • 5

    T oil

  • 3

    tsp Dijon Mustard

Directions

Mix dressing and shake well, making it ahead of time. Cook pasta according to directions. Run under cold water when done cooking. Blanch broccoli, cauliflower, carrots in boiling hot water and cook 5 mins. and then put in cold water. Add to cooked pasta. Add remaining ingredients except tomatoes. Add dressing. Add cherry tomatoes right before serving.
