Ranger Cookies

Ingredients

  • 1 cup shortening
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspons vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups quick oats
  • 2 cups Rice Krispies
  • 1 cup coconut
  • 1/2 cup chopped pecans

Preparation

Step 1

Blend shortening, white sugar, brown sugar, eggs and vanilla.

Sift together flour, baking soda, baking powder and salt. Add to above mixture.

Mix together oats, Rice Krispies, coconut and pecans. Stir in sugar/flour mixture.

Drop onto ungreased cookie sheet. Bake 10-12 minutes at 350 degrees until golden brown. Be careful, if cooked too long, they get too hard.
