Ingredients
- 4 T butter, divided
- 2 T all purpose flour
- 1/2 t salt
- 2 cups milk
- 1 large tomato, chopped
- 1 1/4 cup shredded pepper jack cheese
- 1 box pasta shells, cooked and drained
- 1 pound imitation crabmeat, flaked
- 1/2 cup dry breadcrumbs

Preparation
Step 1
In saucepan, melt 2 T butter. Stir in flour and salt until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in tomato. Remove from heat; stir in 1 cup cheese until melted. Stir in pasta and crabmeat. Pour into greased baking dish. Cover and bake for 20 minutes. Melt the remaining 2 T butter and toss with bread crumbs. Sprinkle over casserole and top with remaining cheese. Bake, uncovered, for 5-10 minutes.
