Maple Nut Pralines

Ingredients

  • 2 c pure maple syrup
  • 1 c heavy (double) cream, plus 2 T if needed
  • 1 T unsalted butter
  • 1 c walnuts, chop
  • 1 c pecans, chop
  • 1/2 t ground nutmeg

Preparation

Step 1

Oil 2 baking sheets. In heavy saucepan over med heat, stir together syrup and 1 c cream. Use Candy Therm & boil till 238* (about 15 min).
Remove from heat let cool to 220* (5 min).
Add butter and stir until melted and mix is creamy, about 1 min. Stir in nuts & nutmeg. Immediately, using a tablespoon, scoop up and drop onto prepared baking sheets, spacing evenly (if mix become too dry to drop, add 2 T cream and stir over low heat until melted).
Let cool completely. Sot rin airtight container at room temp up to 3 weeks
