Ingredients

  • 1 packet of Lay's Dip Creations Country Ranch seasoning mix (I could not find so used zesty ranch packet)
  • 1 green bell pepper, chopped
  • 1/2 med. white onion, chopped
  • 2 tsp veg. oil
  • 18 six-inch yellow corn tortillas
  • 1 1/2 cup chicken stock
  • 2 cups sour cream
  • 1 pound monterey jack cheese, shredded
  • 1 ten ounce can diced tomatoes with green chilies, such as Rotel, drained
  • 1 four-ounce can green chilies, drained
  • 1/2 pound chicken, cooked and cubed
  • 1 tsp salt
  • 1/2 tsp gr. black pepper

Preparation

Step 1

Preheat oven t 375 degrees.

Put the drained tomatoes and drained chilies in a medium bowl.

Saute the onions and bell pepper in oil until peppers are tender, 2 - 3 minutes.Add to tomatoes and chilies, mix throughly.

Blend chicken stock, sour cream, dip mix, salt and pepper until smooth.

Spray the bottom of a 9 x 13 baking dish and cover the bottom of the pan with 6 of the tortillas.

Spread with 1/3 of the chicken, then 1/3 of vegetable mix over the tortllias. Pour 1/3 of the sour cream mixture over the vegetables and top with 1/3 of the shredded cheese. Repeat twice, beginning with the tortillas and ending with the cheese.

Cover with foil and bake for 40 to 45 minutes or until hot in the center and cheese is melted.
