Ingredients
- 2 large white onions
- Light vegetable oil
- 2 pounds potatoes, with skins still on
- Salt and black pepper, to taste
- 1 pinch nutmeg
- 2 eggs, beaten (or equivalent egg substitute)
- 2 tablespoons whole wheat flour
Preparation
Step 1
1.Chop onions, and saute them in a pan with a little oil until wilted and translucent.
2.Grate potatoes and place in a colander to dry. You can also dry them in batches between your hands, but on't leave them for long or they may darken.
3.Mix together onions, potato, oil, salt, pepper, nutmeg, eggs and wheat flour.
4.Heat a pan with 4 tablespoons of oil. Drop potato mixture by tablespoons and flatten each pancake as you drop them.
5.Cook until golden then turn to brown the other side. Remove to paper towels. Serve at once.
