Carrot Ginger Mash

Ingredients
- Makes a serving for four
- 6-8 medium carrots
- dab of butter
- 1 teaspoon white wine vinegar
- 1 teaspoon grated fresh ginger root or 1/2 teaspoon of ground ginger
- salt and pepper to taste

Preparation
Step 1
Peel carrots and cut into coins. place carrot coins in medium saucepan with about 2 inches of water.
Cover and cook on medium heat; and when water boils, reduce heat to medium low
Cook 20 to 25 minutes until carrots are tender when pierced with the tip of a small knife.
Drain carrots. Place in food processor or magic bullet with butter. Whip until consistency of a mash.
Return to saucepan, add vinegar and ginger. Stir to combine, season with salt and pepper.
Cover and cook over low until ready to serve
