Jim's Cream of Potato Soup

  • 6 baking potatoes, peeled
  • 2 slices bacon
  • 1 onion
  • 2 T chopped parsley
  • 1 T flour
  • 1 quart scalded half-and-half
  • 1 cup grated American cheese
  • 1 t Worcestershire sauce
  • 1 T celery salt
  • 1/4 t white pepper

Step 1


Boil potatoes and put through a ricer or mash well. Cut bacon fine, cook in frying pan until crisp, then drain on brown paper.

Sauté onion and parsley in bacon fat; add flour, scalded half-and-half, bacon, potatoes, cheese, Worcestershire sauce and seasonings.
