Fried Fresh Water Fish

Ingredients

  • 2 cups lard
  • 1 cup dehydrated mashed potato flakes
  • 1 cup Aunt Jemima brand pancake mix
  • 1/2 cup plain bread crumbs
  • 2-1/2 lbs freshwater fish (pike, pickerel, bass, etc.)
  • lemon pepper

Method:

Heat lard in heavy skillet over medium-high heat until hot by not smoking.
Meanwhile, put the potato flakes, pancake mix and bread crumbs into a large wide dish and mix well; set aside. Cut the fish filets into large pieces. Season fish on both sides with lemon pepper to taste, then dredge in potato flake mixture, gently shaking off excess. Fry fish in batches, turning once until golden and crisp, 3-4 minutes per batch. Drain on paper towels. Serve hot.
