Ingredients
- 2 cups sugar
- 1 tbsp. cornmeal
- 1/4 cup lemon juice
- 4 eggs
- 1 tbsp. flour
- 4 tsp. lemon rind, grated
- 1/4 cup butter, melted
- 1 pastry piecrust, unbaked
Preparation
Step 1
1. Mix all ingredients, and best until smooth. Pour into large unbaked piecrust, bake at 350 degrees for 45 minutes.
2. I blind bake mine a few minutes, then if needed put reynolds wrap around edge of pie crust if get to brown.
