Ingredients

  • 1 head cabbage (or one bag coleslaw mix)
  • 1 lb. Green pepper
  • 1 medium onion, diced
  • 2 grated carrots
  • 1 teaspoon salt
  • 1/4 teaspoon, fresh ground black pepper
  • 1/4 cup sugar
  • 1/2 cup olive oil
  • 1/2 cup apple cider vinegar
  • 2 tbls. Parsley
  • 1/2 tsp. Dry mustard

Step 1

1. Combine vegetables and toss

2. For dressing, blend remaining ingredients and pour over veggies and toss again

3. Refrigerate overnight to allow flavors to develop.
