Ingredients

  • 1 package of frozen, chopped broccoli
  • 3 tbl Butter
  • 3 tbl Flour
  • 1 tsp Salt
  • 1/8 tsp Nutmeg
  • 1 tsp Lemon Juice
  • 4 Egg Yolks
  • 4 Egg Whites
  • Topping: 1/2 Sour Cream and mayonnaise

Preparation

Step 1

1. Cook broccoli, drain & chop fine. Set aside.
2. Melt butter. Add flour and salt. Cook until bubbly.
3. Add milk. Cook until thick.
4. Add nutmeg, lemon juice, and broccoli.
5. In a bowl, mix flour mixture and broccoli together. Cool slightly. Mix in egg yolks and let cool.
6. In a mixer, beat egg whites until stiff.
7. Fold egg whites into cooled broccoli mix, and pour into a buttered 1 1/2 quart casserole dish.
8. Place casserole dish into a hot water bath and bake at 350 degrees for 1 hour or until firm. It should rise and brown.
