Wild Garlic/Onion Soup

Ingredients
- 2 cups wild garlic (or substitute leeks), trimmed & chopped
- 2 cups potatoes, pared and diced
- 3 T butter
- 1 quart chicken broth or Imperial Broth
- 1 1/2 t salt, or to taste
- 1 cup half and half
- fresh chives

Method:
Trim the wild garlics (leeks) so that there is only a short green tail left above the small white bulb.
Wash very well, drain, and chop into small pieces.
Saute the garlics (leeks) and potatoes in butter until limp but not brown.
Add chicken broth and salt and cook until potatoes are soft.
Purée in a food processor or blender; return to pan, add half and half and heat but do not boil.
Garnish with clipped fresh chives.
