  • Filling Ingredients:
  • 4 heaping tbsp cocoa
  • 3/4 cups sugar
  • 5 tbsp flour
  • 1/4 tsp salt
  • 1 1/2 cups milk
  • 2 egg yolks, beaten slightly
  • 1/2 tsp vanilla
  • 1 tbsp butter
  • Meringue Ingredients:
  • 2 egg whites
  • 1/8 tsp salt
  • 4 tbsp sugar

Servings 8

Step 1

In a saucepan, mix cocoa, sugar, flour, salt, milk, and eggs with a whisk. Cook while stirring on medium heat until it bubbles and thickens, about 5 to 10 minutes. (It will not get any thicker in the oven so cook until it is as thick as you want it.)
Remove from heat and stir in butter and vanilla.
Poke holes in your pie crust with a fork and bake at 350 degrees until it's brown, about 20 minutes.
Beat your egg whites with salt until they start to get fluffy. Add sugar and continue beating. Pour chocolate custard into the baked pie shell and top with meringue. Bake at 350 degrees unil the peaks on the meringue are lightly browned, about 10 minutes.
