Chicken****Greek Salad with Chicken and Creamy Feta Dressing

Ingredients
- DRESSING:
- 1/4 cup buttermilk
- 1/4 cup greek yogurt
- 1 tsp. red wine vinegar
- 1 tsp. dried oregano
- 1 tsp. dried dill weed
- 1 tablespoons minced fresh parsley
- 1/8 tsp. salt
- 1 clove minced garlic
- freshly ground pepper to taste
- 40 grams crumbled feta
- SALAD:
- 1 green onion, minced
- 4 cups shredded romaine or other lettuce of choice
- 10 cherry tomatoes, halved
- 1/4 sweet pepper, cut into strips
- 2 tbsp. thinly sliced red onion
- 2 small cucumbers, thinly sliced
- 3 or 4 peperoncini, sliced, optional
- 2 or 3 radishes, thinly sliced
- 8 oil-cured olives, pitted and halved
- 4 oz. cooked chicken or turkey breast, shredded
- 2 - 3 tablespoons fresh dill, if you have it, added with the lettuce

Step 1
* To prepare the dressing, in a small bowl, whisk buttermilk, yogurt, vinegar, oregano, salt, garlic powder and pepper; stir in feta cheese and scallion. (Can be made on the weekend and refrigerated.
* In a large bowl, layer chicken and veggies. Spoon the dressing over the salad and top with the romaine. At this point, you can refrigerate it for an hour or two, until dinner. When ready to serve, toss well, season with salt and pepper to taste and plate.
