Ingredients
- 1 1 1 Large Eggplant
- 1 1 1 lb. Ground Turkey Breast
- 1 1 1 C. Diced Bell Pepper (any color)
- 1 1 1 Onion, Diced
- 4 4 4 C. Spinach
- 1 1 1 Can No-Salt Added Tomatoes
- 1 1 1 tsp. Minced Garlic
- 1 1 1 Tb. Garlic Powder
- 1 1 1 Tb. Italian Seasoning
- 1 1 1 tsp. Black Pepper
- 1 16oz. 1 16oz. 16oz. Container Cottage Cheese
- 2 2 2 Eggs
- Parmesan Cheese
- 1 1) to 400. oven to 400. Spray a baking sheet with non-stick cooking spray.
- 2 2) 5-7 to and slice eggplant into medium-thick slices. Place on baking sheet and bake for 5-7 minutes. Set out to cool.
- 3 3) 4-5 to 5 turkey for 4-5 minutes before adding onion, peppers, tomatoes, minced garlic, garlic powder, and Italian seasoning. Continue to cook and break up turkey until turkey is cooked through. Let simmer for 5 minutes.
