Ingredients
- Sauce:
- 1/2 lb dry linguini, broken (or other pasta)
- 3 qts boiling water
- 2 C coarsely chopped cooked chicken, skin and fat removed
- 2 T minced onion
- 1/3 C sliced or chopped pimiento-stuffed green olives
- 1/4 C all-purpose flour
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 3 C skim milk
- 1 C grated low-fat medium or sharp Cheddar
- 1 1/2 T sherry
- Topping:
- 1 T butter
- 1/3 C dry bread crumbs
Preparation
Step 1
Cook pasta in boiling water until tender but firm. Drain.
Add chicken, onion and olives. Stir.
Sauce: Stir flour, salt, pepper and paprika in saucepan. Mix in enough milk to make smooth. Stir in rest of milk and cheese. Add sherry. Heat and stir until it boils and thickens. Pour over pasta mixture. Stir. Transfer to 3L casserole.
Topping: Stir butter and bread crumbs together. Sprinkle over top. Bake, uncovered, in 350 oven for about 30 minutes.
