Ingredients

  • 3 cups all purpose flour
  • 1 T plus 2 t pumpkin pie spice
  • 2 t baking soda
  • 1 1/2 t salt
  • 3 cups sugar
  • 15oz can pure pumpkin
  • 4 large eggs
  • 1 cup oil
  • 1/2 cup orange juice
  • 1 cup sweetened cranberries (dried or fresh)

Preparation

Step 1

Combine flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture, stir until just moistened. Fold in cranberries. Spoon batter into 2 greased and floured loaf pans. Bake at 350 for 60-65 minutes. Cool completely for 10 minutes on wire racks.
