Ingredients
- 1 cup raisins
- 1/2 cup dried apricots
- 1/2 cup dried apples
- 1/2 cup almonds
- 1/4 cup vanilla wafers
- 1/3 cup powdered milk
- 1/4 cup molasses or honey
- 1 cup shredded coconut
Preparation
Step 1
Mix raisins, apricots, apples and almonds. Chop finely in a food processor. Then finely grind vanilla wafers in a food processor (this can be done ahead of time). Blend fruit mixture with flour, milk and molasses/honey. Shape into walnut-size balls, flatten and coat with coconut. Makes 24 to 36 cookies.
I used graham crackers in this when I did not have vanilla wafers and they turned out great. This last for days and are very sweet. Perfect for taking while traveling. You can also add mini chocolate chips to them.
