Ingredients
- Vinaigrette:
- 3/4 cup cooked chickpeas
- 1 cup cooked basmati rice
- 1/2 red pepper, diced
- 1/2 green pepper, diced
- 1/2 yellow pepper, diced
- 4 scallions, sliced
- salt to taste
- 2 tsp toasted sesame seeds
- 1 tsp sesame oil
- 1/4 tsp cumin
- 2 Tbsp lemon juice
- 1 Tbsp olive oil
